Chicken Stir Fry

A grocery cupboard staple, MAGGI 2-Minute Noodles can easily be combined with your favourite vegetables, sauce and meat or seafood to create a quick, wholesome and delicious lunch. This simple stir fry recipe can be adapted to include ingredients you and your family members love (and have in stock).

Method

1. Cook MAGGI 2-Minute Noodles according to the directions on the pack but don’t add the flavour sachet. Drain and set aside.

2. Combine the soy sauce, sriracha sauce and vinegar, and set aside.

3. Heat oil in a shallow frying pan or wok. Add the garlic and chilli flakes. Stir fry for 10–15 seconds.

4. Add the onion and fry for a few seconds before adding in the chicken slices. Fry until the chicken turns white in colour.

5. Add the sauce mixture, salt and MAGGI 2-Minute Noodles flavour sachet along with 1/4 cup of water.

6. Cook until the chicken is almost done then add the broccoli and bell pepper. Stir fry for less than a minute. Add the boiled noodles and mix well. Remove from heat.

7. Serve stir fry garnished with roasted peanuts, spring onion and a squeeze of lemon juice.

Macaronni & Cheese

Comfort and kid-friendly food at its best! This gooey mac ‘n cheese recipe is easy to make, uses minimal ingredients and delivers on flavour. If you’re feeling adventurous, you can switch things up a little by adding in bacon, mushroom, chicken, tuna or mince.

Method

1. Preheat oven to 180°C.

2. Cook macaroni according to package directions.

3. In a large bowl, mix milk powder, flour and butter. Gradually add 300ml boiling water, beating constantly.

4. Add half of the cheese and continue beating until smooth and creamy. Stir in macaroni, 1 cup of the remaining cheese and salt.

5. Transfer to a lightly greased baking dish. Cover with foil and bake for 25 minutes.

6. Remove foil, sprinkle with remaining cheese and bake further until the cheese is golden.

Braised Chicken with Lemon & Garlic

Looking for something a little lower in carbs but still high in nutrients and taste? This chicken recipe is quick to prepare and leaves the oven to do most of the work, while you get on with your day … if you can ignore the mouth-watering smells coming from your kitchen!

Method

1. Preheat oven to 190°C. Pat chicken pieces dry with paper towel.

2. Heat oil in a medium saucepan over medium heat. Brown chicken pieces by cooking them for 3–4 minutes per side. Remove from saucepan and place chicken into a roasting pan.

3. In a small bowl, combine the lemon juice and zest, garlic, evaporated milk, thyme, salt and pepper. Pour the mixture over the chicken.

4. Cook chicken for 20–30 minutes, occasionally basting it with the cooking liquid.

5. Serve the chicken with the sauce and your choice of a side.

Creamy Tomato Soup

The temperature is already beginning to drop as we head towards winter. This creamy tomato soup, paired with fresh bread, will keep you warm and satisfied.

Method

1. Heat oil in a large saucepan over medium heat. Cook onion, garlic and celery for 3 minutes or until tender.

2. Add tomatoes and ½ cup of water, cover and cook for 10 minutes or until it just comes to the boil.

3. Transfer to a blender and blend until smooth then return soup to the saucepan and bring to the boil.

4. Blend cornflour with a little NESTLÉ IDEAL Medium Fat Evaporated Milk to form a paste. Add to the soup and bring to the boil, stirring.

5. Remove from heat and stir in the remaining NESTLÉ IDEAL Medium Fat Evaporated Milk.

6. Serve, sprinkled with feta cheese, basil and pine nuts.

Sloppy Joes

Warning: You’ll want to step away from your desk for lunch today. These are as messy and fun as the name suggests, yet still nutritious. Are your hands going to get dirty? Definitely. Will it be worth it? Absolutely!

Method

1. Heat olive oil in a large saucepan on medium high heat. Add carrots and sauté for 5 minutes. Add the onion and celery and sauté until onions are translucent.

2. Add the garlic, cook for 30 seconds then remove from heat and place in a bowl. Set aside.

3. Brown the mince in the pan and season with salt. Drain most of the liquid from the pan, leaving about 1 tablespoon.

4. Return the vegetables to the pan, with the mince. Add the tomato sauce, purée, MAGGI Lazenby Worcestershire Sauce, vinegar and sugar. Mix well then add thyme, cayenne and black pepper. Leave it to simmer for 10 minutes.

5. Serve with toasted hamburger buns.
